Made enough jerky today to last quite some time. This is my 4th go round of making jerky on my UDS. The first few were good (better than store bought) but not perfect but with trial and error each batch got better. I now feel confident enough in my jerky making abilities to post up about it.

Sliced up 18 lbs. bottom round for two batches.

Then marinaded in mommy's secret marinade for 24 hours. I added some Instacure #1 to mommy's recipe. I also trimmed most of the fat from the meat to hold on to for sausage making.

Then on to the top rack of the drum it went for 4 - 5 hours at 150*.

Which then yielded one of these.

Which was immediately followed by a second batch. I should be the envy of my group when we head up for 5 days of camping and wheeling later this week.

Man, I had forgotten about using the toothpick-hanger method...

That really does make for a nice looking finished product. The curl in the strips indicates a nice slow and even drying...that just puts it over the top!

A pocket full of those could last a guy several hours while out riding, hunting, fishing, hiking......let's just say they're perfect for the great outdoors.

Very nice jerky! Thanks for the toothpick reminder, too.

That was some fine looking jerky, great job!
Jerky is still one of those things on the to-do list, hope when I do mine they come out looking even half that good.
 
Got 15 more pounds to make tomorrow. Friends and coworkers are trying to place orders which I take as a pretty good compliment. Give it a try. It isn't hard and the rewards are certainly worth the effort.
 
Is there a key to getting the uds to a constant 150* I have ran it low after I was done with the main smoke.. even with the ball valve half-3/4 closed.. and other two closed.. it either stays around 200* .. or will completely extinguish itself.
