Doing my first butt Sunday... what rub?

Well, I'm about to try my first butt this weekend... Going to head to the store tonight for a butt and whatever I need for rubs and finishing sauce.

What's a good rub? I picked up Jeff's Naked Rib Rub Recipe, and was thinking about using it. It sounds like it might work pretty well on a butt! Any other suggestions? Probably going to use Jeff's finishing sauce that's stickied at the top here, if that makes any difference in what rub I should go with!
 
Awesome... I was hoping to get to try it! Does the recipe as listed make enough rub for a butt or do I need to double it?

Winco carry's a rub from mccormics in all flavors. The pork rub is pretty tasty. Wal mart might carry it to. Enjoy your smoke

I'll have to keep an eye out for the McCormick rubs at the store... No Winco out here in Georgia and I avoid Walmart like the plague, but I'll look for it at Kroger!
 
For me, any rub with brown sugar in it is perfect for pork butts! I always use a large mixture of different spices-- all types of peppers (black, white, cayenne, ancho chili pepper) along with paprika, dry mustard, cumin, corriander, celery seed, onion powder, garlic powder -- and some herbs (rosemary, thyme, oregano, parsley)... and then I mix it with an equal amount of brown sugar. I usually apply salt before putting on the rub.. so I don't add it to the rub.

Another thing, if you've made up enough finishing sauce.... be sure to inject the butt with it (if you've got an injector) and use it as your mop during the smoke!! Good luck and take some picks if you got a camera.
 
Oh I've got a digital SLR, so there'll definitely be pics. My friends say I have my whole life documented!

I was planning on spritzing with apple juice and rum during the smoke. I don't have an injector, but have been thinking about picking one up. Might have to see if I can track one down before Sunday.
 
I'm doing one today on a Bandera.
Rub:
1 cup brown sugar, 2 T pepper, 2 T salt, 2 T Paprika, 1 T chili powder, 1 T Lemon pepper, 1T cumin, 1T garlic powder. If it is too spicey add more brown sugar, if you want it hotter add more chili or a little cayenne.
FYI: I take the butt (I prefer boneless) and pack yellow mustard all over it then pack it with the rub and put it in the frig over night. Bring it to room temp and pack more rub on it prior to cooking. Get a misting bittle and spray it with a vinegar type wash while cooking. Happy pig picking
 
I would go with Jeff's rub. If you have not purchased it and the sauce recipe you are missing out. Aside from being great recipes they also support the site!
 
Just bought it this morning, actually, and that's what I was planning on using for my rub! Figured even if I didn't ever use them, I owed Jeff the money for all the knowledge I've picked up from this site!!!
 
Great, can't wait to see the pics! And rum and apple juice is a very good spritzer, so that should be okay.... I wasn't sure if you were planning on a mop/spritz or not. As far as injecting, I think it really does make a difference. I know some people put the rub on, wrap it, and put it in the fridge the day before they cook..... but I've always preferred injecting it (definitely have some kind of vinegar in your injection) the night before, wrapping it tight in plastic wrap and let it sit in the fridge. Then when I'm ready to smoke, I'll pull it out and let it lose a little of the chill before applying the salt and rub.

But like everybody says, it's all about what you like. So keep trying different things you read on here and you'll have you're own "favorite way" very soon.
 
Last butt I did I used a mixture of Jeff's rib rub and McCormick's Cinnamon Chipotle rub. probably about 2 parts McCormicks to 1 part Jeffs, but I didn't really measure it. It was EXCELLENT!

That's 'cause WINCO strands for the states they operate in... Washington, Idaho, Nevada, California and Oregon. Anyway, I've found safeway and fred meyers (kroger everywhere but the northwest) usually has it in stock.
 
Thanks Mike! I've never noticed those rubs before! I'm guessing they're usually with all the other marinades, sauces, and whatnot? I'm definitely going to keep an eye out for those!
 
i've got a rub that i've been using for a few years on ribs that i thought i'd trying using on my first butt that i'm going to smoke. i use a combination of:

brown sugar
sea salt
fresh cracked pepper
onion powder
garlic powder
mustard powder
celery salt
paprika
cayenne pepper
ground allspice

i would give you measurements, but honestly i never used them, lol. i start mixing everything, give it a quick taste to see if i need to add anything else. i'm going to make up another batch here soon and get some measurements if anyone is interested.

I think it kind of depends on the store. The safeway where I usually get it has them with the rest of the baking spices, just down on a lower shelf, towards where they have the seasoning salts and Mrs. Dash and that kind of thing. If it's not there then definitely check where they have the BBQ sauce and marinades.
 
jfoust - good luck on your first butt!! I've done quite a few of them and have used Jeff's rub on all of them.

Some benefits from using your own, homemade rub:
1. You know what's in it and the ingredients are as fresh as they can be
2. Zero msg added to preserve the rub
3. Anything made with your own hands has some goodness to it!

Store bought rubs are also good, however now I know how to make my own I'm reluctant to go back!!!
