I'm doing my first brisket tonight.  We want this to be done for lunch tomorrow, so I'm starting it about midnight.  Bought a 6lb brisket flat at Costco.  Going to rub it with salt and pepper, and put it in a MES 30".  Planning on a smoke for 1 1/2 hours per pound, and then some rest time after that, should be ready in time for lunch tomorrow.  Will be using the Amazen Pittmaster pellets. I do not plan on wrapping it in foil, unless it's just not progressing.  Ideally, I'm going to set this up and then go to sleep for a few hours.  Will get up and check it when my wife goes to the gym at 5 am. Excited, nervous, all at the same time.

Brian85, I should have added that I do have temp probes. Planning for 1 1/2 hours per pound, but will pull it out when it hits 195'sh.  Might go a little toward 200.  Fully expect it to take either longer, or shorter.  It's done when it's done.

9 hours in, it's at 187.  I ran this about 210 overnight since I didn't want it to finish too fast, then bumped it to 230 after I got up.  It's looking really good.
