Do you Finish the inside of your smoker???

Just wondering if there is any type of finishing that is used on the inside of these steel smokers.  Obviously,  a lot of people paint the outside with a high temp paint, but is it best to leave all the interior steel completely as bare metal??

Is rust an issue?  Most commercial made smokers and BBQ's have some sort of enamel finish on the inside unless they are stainless.  

I am mostly concerned about would to do with my RF baffle plate.  It is made of 3/16" steel and i am wondering if i should paint it with High Temp or just leave as is???
 
Oil it as if it were a cast iron pan....

Paint has no business on the inside of a smoker. Even the best high temp paints will not hold up over time, and the RF plate gets hot enough to tax even the best high temp paints. Best case is the paint flakes and gets on your meat. Worst case is it breaks down and puts toxic chemicals on your meat and in the air.

Best way to do it is to season the inside of the CC as Dave suggests. Spray the inside with Pam (or your favorite vegetable oil or lard) and crank the heat up as high as you can to bake it on.

Then go cook!
