Do any of you have a sausage hanging/holder stand?

My brother wl_kb3 and I and three other buddies are saving our annual "Sausage Fest" this weekend. We are cutting back a bit this year we will be making 200 lbs of sausage and 30 lbs of breakfast sausage in patty style. This is the first year I will have my Smoke Shack so we are going to have all kinds of room in the smoker. This is the main reason I made my smoke shack. We were sick of having to smoke 10 or so smaller batches of sausage on our small smokers. Well my question is do any of you have some type of stand or something you hang your sausage on as it waits to go onto the smoker? My thinking is as they are stuffing it I can be hanging it on the dowels and hanging it on some type of stand. That way I can have all of the sausage ready to roll and once they are all done stuffing I can have the smoker up to temp and load it all at once. I don't want to have to wait for them to get it all stuff and then start hanging the sausage on the dowels and load them one by one. I am sitting here try to come up with an idea but maybe someone already has one.
 
I have a pan rack I bought on eBay that I use.
and being on wheels in convenient to roll out to the smoker.
here's a couple shots of it holding a batch of stick and some polish sausage waiting to be smoked
I would say it could probably hold about 100# or more
 
I have seen those racks and I have thrown away 20 or 30 of them too. Now I have just used dowels in your smoke shed there Rbanstner. You could also use that spiral technique inter weaving your sausage onto a dowel rods. I use my GOSM and I have a bunch of hooks that I bend to use on sausage hanging and I have hung up to about 12lbs of snack sticks. I know it's not what you want but it the principle of it that should help you.
 
I will have to rig something up so I can hang the sausage on the dowels and then hang the dowels on something so they can all be ready to throw into the smoker at once.
 
Dad pulled the it out of the garbage and added screws to hold the dowels in place. It has casters and is easy to wheel from the stuffing table to the smoker and then after done smoking it makes it easy to wheel outside for the spray/cool down of the sausage.
I belive the frame was from some sort of air hokey or kids pool table, i dont remember
 
I went to Home Depot and spent about $6 and made this sausage hanger. I got my inspiration from a laundry rack :-). It folds up for easy storage. I set it up to hold the dowels that fit specifically in my smoker but I can make it wider if I need to by just adjusting the chains at the bottom.
