Dinner Menu "Two" 8 lb. Pork Butts....... Q-View

    These are a couple of butts that I put in the smoker at 11:30 pm Monday night.  The temp of the smoker was 220 and they were in until 4:30 pm Tuesday afternoon with an internal temperture of 195. So figure 17 hours for these two fine specimens. I injected them with homemade apple butter and put my special standard rub on them.  I never once opened the smoker until the end. They were very moist and tender.


    Instead of pulling the pork, I chopped them this time.

    Nice bark on those butts, I like it.

    Looks really good, I love a nice long, slow smoke!

    I bet they tasted great.

    Hey thanks guys.  

    Last night before going to bed I had to pull some bark off and taste one last piece.  Man,  I'll tell you it was as good as it gets.  Mouth watering goodness.  If I could only serve you guys some of this through the Internet.

    You gotta laugh at this one.  My wife who is a health nut and rarely eats meat and doesn't like smoked meats looked at these pictures of the two butts and said " they look like two lungs full of nicotine ".  I just had to laugh.

    Love the bark, I too chop instead of pulling sometimes.

    Hey thanks again guys,

    Yes, I added two jars of "Smokee "J's" BBQ Sauce" Locally made to one butt.
