Hot italian sausage uncased and rolled out 1.25 lbs a piece

The wifes home made chili with beans and meat

add cheese and some mushrooms

on your mark

get set

go

2 breakfast fatties on the left and 3 chili fatties on the right

about halfway

2.5 hours later smoked with avocado, oak, and mesquite at aprx 235 degs

slices nice like "redneck sushi"
 
those fattys look GREAT! good job. i smoked a couple of fattys last night for the first attempt at smoking anything. one sausage and one ground beef. took about 2 1/2 hours and my wife and i were amazed at the results. these things were DELICIOUS! we really didn't know what to expect, but i figured it was the simplest most forgiving thing to start with. everything went well, and the taste was incredible. rick
 
believe it or not this is only our second time doing fatties. The first being about 2weeks ago. I agree with you Razman they are addicting and somewhat easy.

i gotta tell ya, we were both pleasantly surprised at how good they were! and i gained alot of confidence with controlling the heat etc. earlier this week when i described the plan to cook "fattys" and told here what they were, she said she didn't think she would eat them. she said "they sound like a big tube of lard" LOL, she was especially concerned about the sausage one. (she ended up eating more sausage than beef)

anyway, i certainly appreciate the advice to start with fattys.....i'm gonna try pork spare ribs next, and i cant wait! rick
 
Sluggo, please take a couple minutesand go to "roll call" and tell us a little about yourself , family, smoker that ya use and how many years you have been a doctor!

thank y'all! Without the info it wouldn't be possible. Go SMF!! erain the chili was great, we froze it then defrosted. but not so much that it was runny, still coagulated so it rolls with less trouble. The wife says it resembled the taste of pizza. If it was up to her we would have them every other day...lol
I didn't get the pizza taste, just chili and hot Italian sausage taste, awesome first for us. erain no Black Betty here but we do have the que taped if ya like.

. you are one entertaing fella. cool smoker goood tunes,good friends, only thing isee is mebe a lil too much smoke goin on in tha vids. is above and beyond tbs, i was doin the same thing when i started here and got straightend out quickly. fortunatly for me. keep up the smokes and love your vids. there the "bombdigity"!!!!
