Nice looking Wellington,last one I had wasn't even seared it was so rare it was disgusting,the pastry wasn't even cooked on the bottom. They claimed that's how people from Chicago like it,I surveyed the room saw exactly one other person and replied sure but were in Michigan.

Ray it is a slow but well worth doing,my way is a short cut.Most use   Prosciuttini & liver Pate
