I won't bother you with a big write-up since Bear did a splendid job on his post explaining all the details of how to do it all. I used his glaze recipe with the exception that I replaced the maple syrup with honey since I didn't have any maple syrup on hand. So here's the Q-view:
I made double-baked potatoes and peas to go along with it. Very yummy! I would recommend to anyone to give this a try. The idea of putting the trimmed fat over the ham to baste it throughout the smoke is perfect. The ham came out moist and very flavorful, although a bit salty, but that wasn't any fault to the method. I think I'll soak the next ham to hopefully get some of the salt out of it. Over all I'm tickled pink with this! Tomorrow morning breakfast is going to be ham and eggs
