Mom dropped off a massive chunk of pork, I'm going to smoke it but wondering how long it will take to dethaw 12 to 14 pounds. First big big smoke for me also, wondering after I get my rub on it and wrap it how long should I let it set in the fridge? Pretty sure I should of taken it out on Thursday to smoke this weekend. Any thoughts?

I'd say 3-4 days thawed in the fridge. You can speed that up by thawing in cold water. Make sure it's wrapped good or vac packed. Place in cold water. Change out cold water every 30-45 minutes until thawed.

I apply my rubs right before going into the smoker.

I would figure 4 days for thawing. After rubbing, I will give it about 1 hour in the fridge while the smoker comes up to temp.

Good luck and good smokin', Joe

If i have a 12-15lb turkey froze solid and want to smoke it on Saturday morning I usually take it out of the freezer and put it in the fridge on Tuesday morning before work at the latest.  I'd like to think that even though that pork is a solid piece of meat rather than a hollow bird that 4 days in the fridge should get you thawed out just as well.  Then again, if you could leave it thaw in the fridge for 5 days its not like its gonna rot out before you can smoke it.

It is recommended that you only smoke Thawed Meat but if it is INTACT, no injection bone-in, and only still somewhat frozen in the center, there is no safety issue smoking it...JJ

Thanks for all the info, I took it to my local farm market and had the cut it in half, so it should be a easier smoke now. I've become a pretty big fan of the rub an sauce Sweet Rub o Mine. I just added a needle valve to my MBG 30 pro, I just need the weather to break a little. I will show it when I get to it, very soon I hope.
