deer salami 2015

  1. 400 pm ready for the smoker 

    630 am 153 degrees and ready for a shower and a bloom 

    tazzy says .... would ya hurry up ..... I'm hungry 

     deer / pork butt ... 50/50 ........ started in 130 degree smoker to dry , bumped 10 gegrees per hour up to 170 degrees ... started at 400 pm ... reached 153 @ 630 am ........ MES 40 (1st gen ) .... AMNPS hickory /apple 50/50

     10 lb has cheddar cheese added ..... 10 lb has chipotle cheese added 

     later this evening I will give it the taste test!!!!!

    They are looking good Voodoochile. Aren't those clear casings nice to work with?
