Hi...I"m DC and live in Northern Minnesota most of the time, going to Florida in January thru April...I have been using a cold smoker, a Little Chief Electric smoker....I just got a Propane Smoke Hollow 31" smoker and have used it once....smoked some baby back ribs yesterday, and they turned out OK...needed to finish them in the slow cooker, however....not much different than my little chief smoker....I believe the smoker was way to cold, even though the thermometer was reading 225 degrees....more to follow...

Welcome from SC, DC. I'm sure you will enjoy this site with tons of folks who are eager to share ideas, tips, recipes and anything else that you need. All you have to do is ask. Be sure to check your therm in boiling water to see how accurate it is. You also will probably want to get a digital therm to monitor grate temps. As far as ribs go, they ain't done 'til they're done. Check with a bend test or probe with a toothpick. Good luck and keep on smoking, Joe
