day ahead smoke

    im gonna be smoking 4 pork butts this saturday for a golf tourney on sunday. what is the best method or trick i need to know when smoking the day before a party. i feel confident in smoking the butts but i have never tried to do it the day before. any advice or useful hints would be great. thanks

    The only thing id do different is wait to put the finishing sauce on till its reheated, if you use a finishing sauce

    Make sure you pull as much excess fat as possible before you refrigerate. Otherwise, you end up with white clumps on Sunday.

    Do it a couple of days before, less pressure always tastes better the next day anyway so why not. don't forget the finishing sauce. and if something goes wrong but it pretty much can't with butts you have another day to correct.

    throw 'em in the crock pot and you'll be fine. Always works out great for me!

    i was also wondering if i pull the butts when they are done or if i should wait till im about to serve them on sunday?

    I could be wrong here, but i'm thinking you should pull them an hour or so after you finish cooking them...they'll probably "pull" better if they're hot.

    Work with me here. You may need more than 1 crock pot!
