Had an absolute blast making and smoking a fattie today. I was so impatient. Kept wandering outside to look at the smoker ot make sure all was well. Even opened the smoker once or twice (once to add more chips). I know, bad bad, but I was like a kid in a candy store!

Anyways, it was super yummy and here are some pics -

Only thing I would change next time is tweaking the bacon. It was too thick on the fattie (too many strips) and wasn't crunchy.

Other than that it was a hit!

Nice work on that first FATTIE.I believe some folk crisp the bacon in the oven quickly .....after smoking....

Hey Valien, great job on your first Fatty, and no worries on the bacon~ just ramp up your smoking temps a bit and you'll have crisp bacon every time.

Real nice looking results, and very tasty too....love that cheddar cheese in everything. Congratulations!

Well for a first time fatty, I'd say you did a great job. Looks great. A couple things I found that help a bit with getting the bacon crispy is to use the thin, cheap stuff and avoid the thick cut bacon. Also, when its getting close to being done, jack those smoker temps to around 300 if you can. That will help crisp it up a bit. And like you said, it was a hit, so its all good

Nice looking fatty. I like the simple ingredients. Don't worry about your bacon it'll come around. I peel mine off most of the time.

I was going to tell you about the bacon but MeatHunter beat me too it.
 
Bacon wrap looked fine, a bit artistic even.
As already stated-If you can get thin cut bacon give that a try though one thing with fatties and the amount of fat in the sausage is that the bacon can be hard to get to a good crisp level.
I had actually adjusted my tastes to somewhat non-crisp bacon because of them, but only on them.
Anyway, looked great.

Well, It looks like it was a success! A great lookin first fattie, I will have to agree with the rest of the members that I have learned to stay away from the thick cut bacon and use the thin stuff, just doesn't come out as crispy as I like it when using the thick cut stuff. I love my bacon but I like it with a little crisp to it, that's just my preference. I have only made a handfull of fatties and actually never used pork sausage, I always thought it might be too much pork given that it be wrapped with bacon! I will have to give it a shot for my next fattie! Congrats on your first fattie, they are addicting!

Thanks for the tips and well wishes. It was super good. What made it even better was frying it for a snack later on! I finished it up tonight after frying it for a few minutes. Mmmm mmm mmm good!
