Hi everyone,

i have been reading books on smoking for years and had fond memories of smoked mullet a oily fish mostly used for bait or for cats, but when smoked was just awesome. I have moved from using a smoking box in my hooded bbq, to a meco water smoker and now have started converting an old fridge, but i may ditch that and build a brick smoker?

I'm down in brisbane queensland australia and hope to be able to cure and smoke a ham for xmas this year. I recently bought a shop leg of ham and when i started to slice it saline solution squirted across the floor. Wow was i dissapointed.

I would love to be able to show people how much fun it can be and the satisfaction you get from entertaining friends and family with lovely smoked food.

My son a couple of years ago spend 3 months in Aussie land, he loved it. When he got home we threw a few shrimp on the Barbie to celebrate his return home.

Welcome to the SMF from BC Canada. There quite a few of the members that are into curing hams and such. I'm sure they will be along shortly to answer your questions. The guys and gals on here can walk you through making your own smoker and just about anything else related to smoking meats that you can think of.

First off welcome to SMF. You'll like it here there are o load of good peole here that would just love to help you in just about anyway you need. As far as smoked mullet we here in Fla have been weened on the stuff. My mother from new york city loved it.
