The pulled pork I did for the pitch-in was such a success that I am now getting requests to do more for individuals. I am still new at this and it makes me nervous. How the heck do I say no to them. I have agreed to do just one, she wants on Sat by 11am for sons Bday party. She is going to provide the pork (2- 7or 8#'s), foil dishes and some spice rub. This is still a fun hobby so am not going to charge anything for time. I think 2 little ones should cook the same as 1 of same size,, hoping anyway. Just have 1 probe for the Maverick so will have to use that as a guide. Gonna go with standard brine plus some savory herbs, her choice of rub spices and choice of smoke pellets. I did warn her though that there are no guarantees it will be as good as the other one. I am afraid that if I take on too many requests then I will lose the fun of it.
