Any advice on how to cut up a brisket that's too large to fit in the smoker? I have smoked 2 6.5 lb briskets so far which fit perfectly but now I want to buy one at Smart & Final but its like 13+ - Lbs and ain't gunna fit in my smoker. Do they call these Packers?

Yup.......they are packers. When I do a packer on my small smoker, I cut the very least off of it that I can get to fit........from the flat end. I leave the point whole. The smaller piece will cook a bit faster so I have to watch it.

Now a trick I have seen but not tried is to bend the packer in the middle (like an "A" shape) and tied it with string to hold it. He moved his rack down to a lower slot to clear the top and let her go like normal. He foiled it laying flat when it was done with a bit of broth and wrapped it in towels to keep warm in a cooler. I was told it was a great finish.
