The smallest packer brisket I could find was 12 lbs. Can I cut the point off and cook it on a lower shelf with the same result? 
 
Are you trying to save time or is there not enough room for the whole piece?  Just curious why you want to cut it.  But the answer to your question is yes.  You can make burnt ends with the point.

Its to large to fit on the rack of my MES 30. Was thinking to cut point off and cooking it one self lower.
 
Do a search up top for "Separating a brisket" with a lower case "b". Pit does a great job of showing how to break down the point and flat (on my phone so don't know how to post the link)
