My wife loves my smoked turkey. But it is just the two of us most of the time and that is a lot to eat. So my questions are. Can I cure a turkey ( plan on using pops brine cure ). If I do, what will it change?? ( I brine my turkey anyway with out the cureing salt. ) Also, how long with the shelf life be on the turkey before I need to freeze it ???? What I am looking for is a longer shelf life with very little change to my finished bird. I have learned so much from SMF, it is great to have a place to ask questions. THANKS.
 
There will definitely be a change in the flavor, with the nitrite it'll take on a cured flavor much the same as ham and the like.
By shelf life I assume you mean how long you can keep it in the refrigerator after it's smoked and fully cooked before you need to freeze it.
I wouldn't hold it for more than 2-3 days in a 35 degree fridge before freezing.
