Thanks Bear  and for the Point.  You are the one who got me motivated on this curing.  Only Bad thing is the wife said I need to Dial it back. Every time she goes to the fridge she says I have something curing.. Company coming this weekend for First Monday Trade Days in Canton.

Looks great Gary! I was just talking to a friend this morning, while eating some beef jerky he made, about how expensive beef was, and asked if he'd tried jerky with pork. He said he hadn't. I told him I would look into it. When I logged on here, there was your pork jerky! What great timing-I'm definitely going to try this. Thanks for the post, You knocked another one out of the park! David.
