Cured and smoked rib tips

  1. I want to cure some rib tips to smoke and make "seasoning meat".  I have a feeling they would go real well in a  pot of red beans.  I want to use Pop's curing brine.  My question is, how long would the tips from one slab of ribs take to cure?

    How are you going to smoke them? I have some spares curing now in a dry cure. Only curing for 48 hours cause I am hot smoking them. Going for taste not really the cure.

    But to try to answer your question. I would go 3-4 days?
     
  4. Hot smoking them.  I'm going for the taste as well.  Once I finish smoking them, I'll freeze them until I need them. Thanks for your help.

    I have tried both ways and I must confess that I prefer the dry cure over the immersion cure too.

    I used the brine cure for years, then went to the dry cure.

    IMHO the flavor & texture of the meat is much better in the dry cure.
