Cure ID

  1. My lovely wife went out and found some curing salts for me to make an attempt at makin bacon. Problem is the instructions are terrible and I'm not quite sure what kind of cure this is to calculate the right amounts. Sure Cure? I can't find much info on Sure
    Cure. Anyone know what this is or used it?

    Their measurements add up to 6.8g cure for 5lbs meat, I just weighed a teaspoon of cure and got 8g, which is in the ballpark considering my scale may not be perfectly accurate and the teaspoon measurement was slightly rounded. So basically measure it like any other Cure#1 and you should be ok.

    When in doubt just follow the directions to the letter. If you don't have a scale, get one, they're cheap. I'd wait for some of the sausage gurus on the site to weigh in (pardon the pun) before doing anything. I'm pretty sure I'm not misinforming you, but it's best to get a couple more opinions from the guys who really know their stuff. Curing isn't something to "guesstimate".

    If you search cure calculator or something like that in the search bar at the top of the page you will find a very handy tool for this. I think DiggingDogFarm may have posted it on here if memory serves. It also converts to and from metric, which is good for us in the states.

    I just started curing my own bacon.Go to www.amazingribs.com  click on the curing bacon section.You can also ask questions  I have good results following theirs.

    There are more Rib Recipes and instructions here than any other site. What info is at this competitors site that could possibly cause you to post it?...JJ
