I always love my Moms Cumcumber Onion salad made with mayo and vinegar. I decided to add a little twist....that and my wife keeps reminding me about not eating that much mayo!!

Here it is.

1 Cumcumber Sliced
2 good sized Sweet onion sliced
(I tried to keep equal parts onion and cucumber)
1 good pinch of Sweet Basil
Coat with Balsamic Vinegarette Dressing.

I had a pretty big bowl of this made and was really looking forward to putting some on a sandwich the next day....low and behold the kids killed it off on me!
They said it was even better the next day! Imagine that....they don't like onions!

I thought it would be really good to add some black olives to it but they put the stop on that one.
 
That sounds really good shorts, I'm going to have to give that a try.
 
RAW give it a try! I don't know where I came up with the idea but we all went absolutely ape over it! It was great the first day and just absolutely fabulous the next day!!! Easy to make too!!!
 
We do a version that we call Polish Cucumbers

Cukes
Onions
sprinkle of dill
Pinch of salt
Sour cream or plain yogurt
splash of vingar and maybe equal water if too strong
Pinch of sugar if you want
basically anything else if you want

the bad thing is that it doesn't keep well, I mean it should rest overnight or at least a few hours, but it just never seems to make it that long.
 
Cucumber Onion salad is one of my favorite summertime things to eat...got a hankering for some right now....soon...

this is what i call ice box salad--[refrigerator]

1 cup apple cider vinegar
1 cup sugar
1/2 cup water
2 large--or 3 small cucumbers
dice 1 onion
wedge 1 large tomatoe

mix liquid untill sugar desolves --
pour over veggies--
mix again--
let sit overnight in ice box--[refridgerator]

this always gets 100% eaten...
