i took some cubed steak, then i put jalapeno pepper and some red onion. and put some tony chacheres creole seasoning on the steak, then rolled it up, wrapped with smoked bacon, put on the grill. VERRRRRY GOOOOOOOD> you have got to try that... going to try chicken breast next. i think i am going to beat the breast down with a mallet, then add pepper and a sweet onion and try. let me know if you like it.

I am going to have to try that. Usually when I do cube steak it turns out dry, tender but always dry.
Thinking the bacon might be the ticket here.
 
Whenever I grill cube steaks, I drizzle them with honey when I put them on and they carmalize and stay tender and juicy. That's to go along with any seasonings that I use.

Just a little side note on cube steak. When I was in high school, 1953, I worked part-time in a meat packing co with retail and wholesale accounts. There were 4 employees who made cube steaks 8 hours a day five days a week . They would run meat thru their machines until they had large pieces, then cut them in sandwich size pieces and package in 10# boxes. Cube steak sandwichs were a big thing in almost every diner.
