CSR's on the WSM!

    My plan was to do some country style ribs and leg quarters hot and fast on the WSM.  It's quite breezy today and the smoker wants to run at 250 with all vents wide open.  I wanted a bit hotter for some bite through skin on the quarters, but I'll live with what comes up.

    They are both rubbed with Jeff's rub, and I think both will be good if smoked to 170 IT.

    After 3 hrs, I checked the CSR's and they were all over 180.  Took them off the smoker and checked the quarters.  They were at 180.  I didn't use the Maverick, just the lid therm as my reference.  I wanted a high smoke temp, and I think I achieved that goal.

    Thanks guys!  The chicken skin was rubbery, but the flavor was awesome.
