Looks like a fairly coarse grind... I like that for the "tooth" feel....
Nothing like a bunch of guys getting together chewing the fat and having a few and just plain having fun would not happen here we are receiving 24" of that white crap. hope you guys have a great time. CB on another note the MS doing OK now.

100 pounds is a bunch to do even with 5-6 people ....I know, because I have done large batches in the past and it will wear you out. I know your team is pleasantly tired but the forum needs to see more pictures. It appears you guys have it under control and got it "knocked" out.

Sounds like you need a bigger stuffer and smoker CB.... The alkaseltzer and shots are only temporary.... lol Ive found when getting help the best help is doing the clean up. Thats the part of sausage making that doesnt get thought about until you've done it all
I'm using my big smoker for most of the sausage. It's full of ss and Italian right now.
Alkaseltzer helped, but this was the cure!
I fat fingered my post. Cleanup is great with my group. We have one guy we call Mr Mom. He cleans almost as fast as we can make a mess.
