Started with this: I mixed and cased 4lbs of lean beef and 3lbs of chicken (2lbs thighs, 1lb breast) last night. I put them in the fridge over night and pulled out today to smoke. 3lbs of chicken ready for smoker! 4lbs of beef ready for the smoker! About two hours in the smoke. Shouldn't be much longer. I fried up a bit of each to try out before smoke and the chicken was unreal! Perfect blend with the breast and thigh meat nice and juicy and the flavor is GREAT!!!!!
