I was going thu some new threads the other night and came upon some CSR steaks and thought that they would be good. So here we go. I found some CSR steaks that were pretty thic so I picked them up. I used my normal Old Bay and brown sugar rub and smoked them over some cherry wood chips and took them to 150°ish.

Then it's into the smoker @ 260° till they hit maybe 150°

Then it onto the plate with some green beans.

Here's a smoke ring it might be hard to see but it's there. They were really amasing flavor and very moist and tender to. So everyone should try theses things.

Thanks for looking and we really enjoyed them.

Nice looking pork steaks, Mark. Those were cut a little thicker than I normally see them.  I really like that for smoking. The pork we get these days is bred and fed so much for lean meat that I think smoking is the way to go when you can get nice thick cuts like those.

Good luck and good smoking.

I know Marv thats why I bought thoses steak because they were cut thick like that. I don't see them thick very often.

I love doing Butt Steaks on the grill! I've never seen them that thick. I may get the butcher to slice me a butt into thick slices. About how long did it take at that temperature to get those done in the smoker?

I need to try this. I buy pork steaks all the time, cheaper than pork chops and a lot better tasting to me. The wife usually soaks them in orange juice and some spices then I just throw on the grill for 15 minutes or so on high.

Very true. Growing up these are what I thought Pork Chops were because that was all Dad ever bought. He thought Rib Chops were too lean and being old school Mom always cooked pork to death so they were dry. Sliced Butt Steaks tolerate cooking them well done and stay juicy...JJ
