Couple Butts Smoking on the Grill - Q-View!

Smoking a couple boston butts for a Mom's Day BBQ.

Did some mods to the gas grill for smoking and trying it out with these 2 bad boys, one 10lbs and the other 9lbs. So far it has done great maintaining a 225~238, seeing a 13° or less difference around the butts measured at 3 points.

Was figuring this to be a 14 hr or so smoke. Started at 6am so I'll probably be pulling these at midnight..LOL.

Internal temp is sitting at 153, been there a couple hours now. I didn't measure it later in the smoke, I wanted the thermometers around the meat to get a handle on the smoking temp.

Here's whats going on so far.

Rotated the butts and sprayed with a 50/50 mix of apple juice and whiskey every 1.5 hrs.

Rub:
1C Paprika, 3/4C Chili Powder, 1/2C McCormick Garlic and Herb seasoning (salt free), 1/4C Brown Sugar.

Coated with mustard and rubbed, ready to go on.

After 10hrs checked internal temp, 153.

Looks like you've hit the plateau mark and then you should notice the temps climb quicker. It'll be midnight sooner than ya think.

. Both butts still at plateau 153,154, more than 3 hrs. They are pretty big.

Looking more like I'll be wrapping and into the cooler when finished, pull em in the morning

Dave - I'm in your company by also smoking 21# of butt, for Monday. Have 2 - 8# cuts and a 4# cut. Started around 10:30 and am at an internal of 150 on everything. Internal temp has been between 225 - 235.

Will be up with ya tonight peeking at the smoker temps with a flashlight, but it will sure be tasty tomorrow!! Good luck and great looking pics!!

Good Morning...took them out after midnight, butts took almost 18hrs

. Plateau last more than 4hrs on both butts.

It was all worth it

Brought them up in the oven to 195°, left in the foil, wrapped in a blanket and into the cooler until morning. The temps in the morning were still at 170°! I'll tell you... sitting all that time resting made them very juicy and tender. From now on I'll let them sit over night before pulling them, they came out great. Touched them up with some finishing sauce and they are ready to go

Yielded around 9.75 lbs of meat from the 19 lb starting weight. Around 50%.
