Hi Everyone

I just bought 15 pounds (two packs) of Pork Shoulder Country Style Ribs (boneless) from Costco.

When I got them home, I realized they don't go on the rib rack I bought for my Big Green Egg.

Guess that's why they are boneless.  Duh!

Anyway, do I just lay them on the grill and smoke them slowly at about 225 degrees?  The rack won't work.

I'm also thinking about trying apple chips for the smoke.

Anyway, I'm new at this (why did I buy 15 lbs???!!).

Ready to learn.

Lay on the grate is just fine, just leave some room between the 'ribs' so heat and smoke can get around. apple wood is just fine.. season like you would a butt or shoulder and take the IT to your desired IT. If you want them to pull apart.. high IT.. if you want to grab em and eat em like a rib (boneless of coarse) keep it a little lower...
