You could maybe just smoke it at a low temp (200°-220°) for 30-60 min., that should keep it from overcooking but still give you a light smokey flavor.
 
Those chickens are so done to perfection, I would think any additional heating would dry them out.

Maybe lighting both ends of an AMNPS for 1/2 hour with no heat would give them some smoke flavor.
 
With this method, I would use one of the stronger woods because of the short smoke time.

If you are going to add some smoke to a Costco pre-cooked chicken, then I would not add any heat. It is done you just want some smoke flavor.
 
I would Smoke at 200*F for the 30-60 to get flavor and to Re-Heat...Don't forget safety here...Who knows where Betsy No'Clue, at Costco, has put her Hand's!?!...JJ
