Hey ya"ll! I recently picked up a new electric smoker and got the chance to break it in this past weekend. My first smoke was a venison pastrami and I must say it might be the best thing I've ever made! I corned the venison for eight days, threw it on the smoker and cooked it low and slow until it reached an IT of 150. Tonight I'll enjoy it between two slices of fresh baked rye bread with some carmelized onions and Swiss.
