Picked up a bunch of corned beef on clearance so i figured i would smoke two. Gothem in water soaking now. I will also be trying my hand at some trout on my ECB so hope they turn out. Going to use very little cool with the apple chunks to try and keep heat low. Should i use water pan too? In brine right now. Any advice on the fish would be good have about 16 small trout fillets and two whole small trout brining.
