I made my first pastrami. It was pretty good.

First I made the corned beef.
2 TBS Tender quick
2 tsp. paprika
3 cloves of minced garlic
2 tablespoons sugar
1 tablespoon mixed pickling spices
1 cup salt

It was a 2.7lb brisket flat let it set for 12 days.

The rub:
3 TBS Coarse ground pepper
1 TBS Paprika
½ tsp red pepper
2 TBS coriander

Smoked with hickory to 180º I should have went up to 200.
I made a few of hot slices as you can see, but let sit in the fridge overnight

I have made it once,but used a already done corned beef from the store. It turned out reall good and I will not be buying it already done from the deli anymore!!!!!!!!! Congrats and again it looks great!!!!!

I am waiting for my schedual to settle down to a steady helter skelter so that I can do up a few for myself. I have all of the spice tubs and brining containers set aside just waiting for the moment that I get the all clear.

I would smoke it to about 190º so it would be more tender.

Other than that I really liked it. Great with mustard and cheese!

I made one a few weeks ago, I went out and picked some juniper berries and put them in the rub, it was very good.
