corned beef / pastrami

    I made my first pastrami. It was pretty good.

    First I made the corned beef.
    2 TBS Tender quick
    2 tsp. paprika
    3 cloves of minced garlic
    2 tablespoons sugar
    1 tablespoon mixed pickling spices
    1 cup salt

    It was a 2.7lb brisket flat let it set for 12 days.

    The rub:
    3 TBS Coarse ground pepper
    1 TBS Paprika
    ½ tsp red pepper
    2 TBS coriander

    Smoked with hickory to 180º I should have went up to 200.
    I made a few of hot slices as you can see, but let sit in the fridge overnight

    Looks great Glued[​IMG] I have made it once,but used a already done corned beef from the store. It turned out reall good and I will not be buying it already done from the deli anymore!!!!!!!!! Congrats and again it looks great!!!!!

    Well I only see one MAJOR MISTAKE........

    I am waiting for my schedual to settle down to a steady helter skelter so that I can do up a few for myself. I have all of the spice tubs and brining containers set aside just waiting for the moment that I get the all clear.

    Yummmmmmm Puh straaaaaah meeeeee! Drool.......slurp!

    I would smoke it to about 190º so it would be more tender.

    Other than that I really liked it. Great with mustard and cheese!

    Looks great Jeremy,[​IMG] I made one a few weeks ago, I went out and picked some juniper berries and put them in the rub, it was very good.

    that is on my list of things todo when the temp outside gets above -30
