OK, check it out! Pastrami & Smoked Provolone w/ Kraut on a toasted homemade honey rye, dressed with creole mustard that has a hint of horseradish!! Not too shabby If I say so myself. Steamed it to >200 degrees, its still not very tender, but it is edible. The fresh bread and smoked provolone though take up the slack. I now know more than I did when I started and I'll be ready for the next time as soon as I can put compress all this experience into knowledge. BTW That sandwich was definitely work the hassle and the wait! Thanks for all the helpful suggestions and guidance, I appreciate it all.
