Cook vegetables before rollling?

Headed for the grocery.....first fatties today in the MES.

Planning on onion and pell pepper, along with the cheese. If going to internal temp of 165, do I need to cook the vegetables any before putting them in the fattie?

I usually do, but you could do without it if you like your veggies crunchy
 
I cook them first because they take up less room once they've been cooked down.  Specifically with onions.  You get the onions caramelized which adds so much more flavor.
