Competition Rib Practice Q view

The ribs look great!

How'd you get them to stick to the wall like that?

not a secret on color.  i applied my rub then a layer of mustard i wrap them in plastic wrap for 12-15 hours.  started my smoker i used my UDS since in was a practice run.  I burn hickory.  Remove the Ribs from fridge and unwrap and put another layer of rub on.  put on smoker meat side up for 2.5 hours.  remove from smoker and wrap with honey and Turbinado sugar i add a little juice to my foil but i do not seal my foil because i want the steam to come out since this is for competition i do not want them fall off the bone.  Put back on smoker for 3 hours.  After 3 hours remove from smoker and apply sauce to both side and put back on smoker for 15 minutes remove add a lite layer of Sauce and done.

Hi Brett we have done a handful of back yard contests.  We will be entering our first KCBS event in March.
 
Thanks for the info Bully. My coworker and I have done two KCBS comps. It was a lot of fun. Lots of work but fun. Also did a comp at the local fair last summer but it was not as organized as it should have been. You will have to keep us updated on how things go.

Brett we have done pretty good in the Back yard events.  We got first in one last year in Brainerd MN about 70 teams.  we have finished in the money a few times in other ones.  But like you said they are usually not ran the best and that gets frustrating.  So we decided to do some KCBS events this year.  But the results of this first event will determine how many we enter this year. 

I will be sure to take pictures and give a detailed report when we get done.
