Wow. All awesome information. Where do y'all source your wood chips?

I'll have to drag LOML to Sam's and have a look at the MES. I've pretty much decided that is the direction I'm headed.

Whew. Sorry to be so long in getting back here. Well, I've made a complete about face on the smoker. There is an 18" WSM enroute to my house as we speak. Don't know why, but saw some of the reviews of the Bullet and just decided to jump. There is a guy at work who brought in some mesquite smoked ribs the other day. I could smell them when he opened the container. Wow. No rub or sauce,just beef ribs. He gave me a taste and omigawd...... So, I'm on the slippery slope. First order from LOML is a smoked turkey so I'll start on that when the smoker arrives. Thanks again to all the great responses and hopefully I'll be back soon. chris
