Hello everyone,
I am new here but I have been reading the forum for awhile now. I recently obtained a commercial SS fridge that I would like to convert to a smoker for both cold and hot smoking. Unfortunately it is full of foam insulation that I am in the process of pulling out and replacing with Roxul. My biggest concern at the moment is the inside of the cabinet. It is aluminum.. Do I need to be concerned about this? replace with SS sheeting? or is there nothing to be worried about? Thanks for your input!!!
