Cole slaw = Heath Dept Violation?? BAH!

This afternoon, the Stf in StfRon and I went to the 3rd Sunday Antique Market in Bloomington, IL. After walking for an hour or so, we decided it was time for some grub! Imagine my surprise when we found a small camper selling "Dixie Style BBQ" I walked to the window and commented, "Well, I just have one question, do your sammies have cole slaw?" I must have perked up someone's ears, because a older gent peeked around the corner and shot back with a smile, "Don't I wish!" He then explained that the local health department wouldn't allow him to serve cole slaw on his sammies. He went on to say that they allowed vinegar based slaw, but not mayo based slaw- can anyone explain?

Oh and he had a beautiful Ole Hickory pit-
 
It's because mayo based slaw will get nasties in it very fast if left out of a refrigerated environment for very long. The vinegar based slaw has a built-in barrier to the bacteria. They don't like vinegar. I don't really understand why it would be a problem if the coleslaw were kept refrigerated until it was served tho.......??
 
Sounds as if it was mostly a rule by the health dept. instead of the gentleman's ambitions. Anyone ever been sick from mayo-food-poisening?? Let's just say I haven't eaten the stuff (on purpose) for over 15 years ...

Well, FWIW, the guy promised me a little smuggled slaw next time I visited his stand-
 
Never been sick from eating mayo in my coleslaw. We serve it all the time in the home environment picnics outside. With that being said, I wouldn't want anyone to get sick either.
