Cold smoking season 2014-2015: pork shoulder

    These were cut off some shoulder roasts I used for sausages. I started them for coppa style dried meat, but couldn't fit them in the beef middles I had so I decided to cold smoke them.

    After 12 days and about 30h of smoke they are at 30% weight loss.
