    Forgot to say...my first sausage making in years. Just got the "machinery". Also made some soppressata.... different thread.

    Here it is ready to enjoy.

    Lamb taste is very mild (I used pork backfat). Allspice, thyme and rosemary combine harmoniously with the meat.
