Has anyone cold smoked Canadian Bacon? I have 24 pounds of pork loin curing for the next ten days and I wanted to get some ideas from the forum before the smoking day arrives. I would appreciate any advice or comments on this method.

I haven't, my main concern it that it looks a lot like ham, and that someone might just take a hunk and eat it.  No one would do that with regular bacon, so I don't think anyone worries about that.

I cold smoked mine for a few hours, then slowly took it to 145 IT, still nice and juicy, no problem with re-heating.  24 lbs, nice, hope to see some pictures!
