Cold smoking beef before drying?

Hi Folks

I make my own jerky with a dehydrator but was wandering can i cold smoke the raw meat for flavour before i dry it?

This is my 1st post and i have no knowledge of smoking as yet so not sure it safe to cold smoke raw meat straight out of the pack.

You will definitely want to use cure  if you are  going to be doing this. I'm guessing you haven't ever tried just smoking it instead of using the dehydrator? I finally broke down and smoked mine instead of dehydrating it last time and it didn't take any longer  ant it was way better. But to answer your question yes you can cold smoke it for a few hours for flavor then throw it in the dehydrator or oven to finished but you would need to use cure to make this safe. I haven't ever done it that way but have heard of other people doing it.

Certainly!!

The cures in your neck of the woods may be different that the Cure #1 here, so note the difference when calculating the appropriate amount of cure.

Just bought 200g Prague Powder #1 - Cure #1 i presume this is the stuff you folks are on about to cure the beef before i cold smoke then dehydrate?

Also what can I cold smoke?

The problem I have is I don’t have access to my own garden so can’t build or have a hot smoker in the communal gardens but can get away with a small cold smoker on the garden table for a few hours.
