Homemade brats?

If cold smoking the meat has to have cure in it or be really cold outside.

Seeing your in Iowa, it might be really cold.
 
Doesn't matter homemade or brought in a store I got some from a grocery store and going to try them. I think now is a good time to cold smoke here in Iowa it's about 30 degs.

It does matter. Unless it cold ( which you say it is ) to cold smoke it has to have cure in it.

If you can keep the meat under 40 degrees then go for it.
