Coconut Chicken Leg Quarters

    A little while back I tried brining some chicken legs different ways, one of those ways was coconut juice with a little vanilla. They were so good I decided to give it another try with some leg quarters.

    This time I went with a can of roasted coconut juice just to give it a try. I wish I had 2 cans because 1 was not enough to cover the chicken so I had to add some water and a little extra sugar to make up the difference.

    Into the juice I dissolved 1/4C kosher salt, 1/3C white sugar and 1/2T vanilla.

    And a cup or two of water until there was enough brine to cover the chicken.

    Let sit for 24 hours, removed from the brine and stuck some of the diced coconut under the skin.


    Sorry for the lack of cooking photos, kept forgetting to grab the camera.
    Anyway, cooked over apple at 275-300.



    Even with the extra water instead of coconut juice they had a great light coconut flavor, lightly sweet and even the skin was great.
    I never eat the skin but gave it a try after hearing how good it was, and it was delicious.
    Next time I will make sure to have more coconut juice on hand so I don't have to sub with any water.

    Yeah, I second that. What a wild creation! Nice job, and I'm giving points 'cause it's something I've now GOT to try ...

    Fire, that looks great. We get a lot of Goya products here in Fla. but I haven't seen the roasted coconut water. The regular is pretty light in flavor. I bet the roasted one pumps it up a notch.

    Same here...got coconut milk but no water. Fascinating recipe and idea...love that caribbean-influence in the chicken. All that's needed is an icy rum drink and Karl Zero on the stereo~ Woo-hoo! I'm there! [​IMG]

    Got to give it a try. Points for great looking chicken, FiU.

    Sorry I didn't respond until today. Had one hell of a storm blow through last night, lightning strikes everywhere and knocked out the internet.

    I get the coconut juice the same place I buy my dried chipotles, up in Wilmington/Newark Delaware there is a "Farmers Market" but it is more like an international farmers market with all kinds of Asian, Indian, Hispanic items.

    They have everything from fresh local produce to 20+ kinds of dried peppers, imported fruits, lots of cans and jars of stuff that I can only guess as to what it is because I can't read it, big 'ol dried octopus hanging in bags, fresh made chorizos, etc.
    Don't know if coconut milk would work or not but it could be worth a try.

    You know I'll be trying this. My wife said to do it with tomorrows chicken cook. Off to get some coconuts, theres lots at work.

    That sounds like a great flavor combo. I remember the post from last time. You're becoming the chicken king around here for sure. Awesome post man. Great photos!
