My name is Matt and I live in Wilmington, Delaware. My smoking experience is non-existant, but I am committed to becoming proficient! I have purchased a Master Forge vertical charcoal smoker and have made some attempts at modifying (based on others recommendations) to increase performance. I have issues with heat, but based on some insightful responses believe that it may be more a faulty factory gauge or misplaced therm causing for misleading numbers. I suppose a new purchase might be necessary sometime soon. I have been doing small practice runs in an attempt to get down the right amount of coal and wood for a slow sustained burn, however, too much or too little seems to be my usual amount chosen. Here's hoping I get this down and soon!

Welcome to the forum and your new obsession. It's a learning curve with each unit acting differently until you learn the quirts of it. I smoked up a lot of cheap chicken quarters before spending bucks on a nice chunk of meat.
