Cleaning Grinder

Discussion in 'Sausage' started by estroner, Jan 11, 2016.

  1. I have what might be a silly question but I will ask anyway. I was stuffing sausage with my grinder yesterday and realized that there was a lot of meat left in the neck and the filling tube. What do you use to push the rest of the meat out? I have read to try bread. Any other suggestions? I am new to this process but really am enjoying it so far. Thanks a bunch.

I have read about running a slice or 2 of bread through to push remainder of meat thru grinder. Very small amount that does not affect the end product.

I run a couple of pieces of bread through the grinder to get the rest of the meat out.  Just before I do it, I replace my catch tray with a bowl so I can get out most of the bread after the grind.

If some of the bread stays in, it's not a problem.  Once mixed, you'll never know it was there.  If possible, put a couple of pieces of bread on the counter before you start to grind your meat.  That give the bread a chance to firm up a bit.

Your neck should have been empty if you used your pusher ? Let the grinder run until the meat no longer comes through the grinding plate and there should be very little meat left. I used bread once and it was a PITA to get the bread out of the holes in the plate.

First off are you stuffing with your grinder. I dont recommend using bread to push meat through a stuffing tube

NOTE: When adding bread to a grinder be ready to shut the grinder off. The bread can become impacted in the plate and stop the grinder and damage it. Try to use the bread end pieces only...... This should only be done to push the meat out of the screw

A simple coat hanger and a piece of paper towel will push the meat out of the tube

  12. I should have been a little more clear with my issue. I did push all the meat down the neck but there was still a bunch in the auger and the stuffing tube. probably enough for three-four linked brats. I purchased a new Cabelas .75 hp grinder and used it to grind the meat, I was trying chicken. I think the issue was that it came with a very thin 3 pronged piece of metal to use to stuffing sausage. I did order a kidney shaped plate which hopefully will help. Could it have something to do with using cheese in the process? Like I mentioned, I am new to this and truly appreciate every bit of advice/help.

Good thing is if you think it was a mistake and ate it,it should have been shipped to me for quality control.I only have a Jerky Cannon for my sausage makin the grinders seem to soften the meat when using it.Good luck with the plates and post some pics.

  15. When I run the next batch I will. It is too damn cold here in Iowa to do much with grilling/smoking it though.

I push it through the tube with a wooden dowel, while the casing is still attached. This is with a dedicated stuffer, but will work with tube attached to grinder. Just unscrew and remove tube, push with dowel and done. Make a patty with anything else as suggested above.
    Good luck!!
