Citrus Sage Chicken Sausage

The other kind of chicken sausage I made this weekend was a Citrus/Sage creation. Basically I took seasoning ingredients that I use in my poultry brine and twisted them into amounts that seemed appropriate for a sausage recipe. I think it came out great and is definitely something I will make again.

The recipe
3 lbs boneless/skinless chicken thighs
3 TBSP oats
1 TBSP kosher salt
1 1/2 tsp CBP
1 1/2 tsp granulated garlic
1 1/2 tsp onion powder
zest of 3 mandarin oranges
juice of 3 mandarin oranges
1 tsp ground Sage
1/2 tsp coriander
1/2 tsp thyme

Blended the chunks of chicken with the seasoning


Ground up then folded in the juice


Stuffed and linked


Grilled over RO lump. There are also some chipotle lime sausages on the plate


This recipe came out great. My wife said the orange flavor seemed slightly strong when I fried up a test pattie after stuffing, I thought it was fine. But after a night in the fridge before cooking it mellowed some and was great the next day. I would definitely make this again. It will be a great summer time sausage, light citrus flavor and a great texture

There is some fat, just not near as much as pork. The addition of the oats help with the consistency/texture. I thought they came out great. Not dry at all.
 
cool man you have some good post keep it up!! i want to try chicken sausage, and the beer one you posted before, stuffer will be here soon so i will be doing these by the weekend.
 
Thanks everyone. I think I am gonna be making a bunch of these this summer. A couple of these and a couple cold Sam Adam's Summer Ales on a hot day sound just right.
