Chukie Dual Stall?

    Doing a 3+ lb chuckie this afternoon. Stall seems interesting - clearly stalled at about 140-142 for 30 min or so. then rose to 149-150 and seems to be stalled there as well for a while.

    Is this normal?

    I've had that happen to me twice on briskets. Both times it was cold and windy but I don't know if that played a part or not. Never the less they eventually started to climb and everything was fine.

    Seems to be on the move again.

    I'm using two temp probes - seeing as much as 7 deg difference. Of course, I assume they are equally calibrated. Will check that when were done.

    That happens to me somewhat regularly when doing chuckies, luckily the second stall doesn't seem to last that long.
    Got a chuckie going right now as a matter of fact, haven't probed it yet.

    Coming along very nicely. 195 Do you guys let this rest in the cooler for an hour or so? This is killin me!

    Yes, an hour rest and then good to go, just know that when you are shredding it you will have those few areas with fat running through, I usually pull the meat straight from that when shredding but you can always leave it in if you feel like it.

    Mine is just at 160 now so going to wrap in foil soon.

    Pulled it a 205 after 8+ hours and rested for an hour. Great, if a little dry. Will post qview tommorrow.

    Everything sounds good there John. But i'm sorry if it is alittle dry it shouldn't be but then I have never heard of or had a chuckie stall on me yet doing it twice in the same smoke. Now thas weird.[​IMG]
